    In house training as chef comes to your kitchen and works hand in hand with your chef. What chef skills offers:

    • Per plate costing
    • Purchasing procedures , relating to managing weekly food costs.
    • Identifying weaknesses and strengths impacting on food costs.
    • Health and hygiene
    • Kitchen safety, staff and restaurant.
    • Waste management
    • Conflict resolution
    • Duty rosters
    • Menu tweaking
    • Presentation skills

    This training option has no certificate as its drawn up by myself and positive results are seen as the course progresses. The knowledge and procedures is then used by the head chef to maintain productivity.

    Menus

    Putting together 3 to 4 week rotational menu’s and factors contributing to its financial viability,like:

    • Budgets
    • Costing
    • Correct use of ingredients
    • Waste management
    • Health and hygiene
    • Kitchen safety

    We also set up professional kitchens for new restaurants, from kitchen design and purchasing the correct equipment enabling a efficient productive business. This includes new menu development and the chef training to maintain the specific menu.
